We had a team meeting tonight so I made some Red Velvet Insanity cupcakes to celebrate our finishing Insanity. The recipe was from my Hungry Girl cookbook. They came out pretty, though a little moist. But for just 140 calories a cupcake it's really good. And they were pretty quick to make.
